We were able to buy a very small amount of a 48-hour anaerobic natural single-origin from Fazenda Reis in Três Pontas, Sul de Minas, Brazil. The farm has been in the Reis family since 1933. It is run today by José Carlos Reis, the son of the original owner, and his son Flávio Reis, the third generation on the same land. The cup is bold but silky, with a slight raspberry note up top, dark chocolate underneath, and a dry white wine finish. Not sweet, not jammy. Distinctive.

About the growers

Fazenda Reis sits at 900 to 970 meters in the Mantiqueira de Minas region. The farm has been in the Reis family for three generations, since Aneite Reis inherited five hectares in 1933. Today his son José Carlos and grandson Flávio run the operation. Flávio is the family's processing innovator and has won the Taste of Harvest competition three years running, plus a two-star Great Taste Award in 2023.

The Reis family also farms milk, soybeans, and wheat to keep workers employed year-round and shield them from the coffee market's volatility. The farm includes worker housing for families, an on-site nursery, and a medical center with a weekly doctor visit.

About the process

This batch was processed in Flávio's pioneering static-box anaerobic system, a technique rarely seen elsewhere in Brazil. Whole coffee cherries stack inside sealed boxes flooded with temperature-controlled air, which slows fermentation and lets Flávio dial in flavor with much greater precision than open-tank anaerobic allows. The cherries fermented for 48 hours in the static boxes, then dried for approximately 20 days on raised beds and patios. Fruit and bean dry together: this is a natural process, not washed.

Varietals are Acaía and Mundo Novo. We imported this lot through friends who specialize in Brazilian green coffee.

What is anaerobic coffee?

Anaerobic coffee is coffee whose fermentation step happens without oxygen. In conventional processing, harvested cherries ferment in open tanks or on raised beds with ambient microbes participating. Anaerobic processing seals the cherries in an oxygen-free environment, which changes which microbes participate and produces different flavor compounds. The resulting cup carries notes you do not usually find in non-anaerobic coffee: tropical and red fruit, floral character, and a wine-like quality in the finish. Flávio's static-box variant adds temperature control to the mix, which is what makes his lots so consistent.
