Kochere: One of Ethiopia's Premier Growing Zones

Kochere is a woreda (district) within the Gedeo Zone of southern Ethiopia, sitting inside the broader Yirgacheffe growing region. Yirgacheffe is one of the most celebrated and price-premium origins in specialty coffee, and Kochere is among its most distinguished sub-regions.

The elevation in Kochere reaches 1,800–2,200 meters above sea level, some of the highest coffee-growing altitude in Ethiopia. These elevations create the cool nights and warm days that slow cherry development and concentrate sugars and flavor compounds in the bean (chlorogenic acid review).

Ethiopia also has an extraordinary genetic advantage: the wild Arabica varieties native to Ethiopian forests carry far more genetic diversity than the relatively narrow selection of varieties cultivated elsewhere in the world. This diversity translates to flavor complexity that can't be replicated by growing any single named variety at high altitude somewhere else.

Washed vs Natural Process: Why It Matters for Kochere

Ethiopia produces both washed and natural coffees, and the two taste dramatically different even when grown in the same region from similar trees. Understanding the difference explains why we chose washed for our Kochere.

Natural (dry) process: The whole cherry is dried with the fruit intact. Sugars from the pulp ferment into the seed during drying, producing pronounced fruity, wine-like, and sometimes jammy flavors. Ethiopian naturals are often described as blueberry, strawberry, and dark fruit forward with heavy body.

Washed (wet) process: The fruit is removed from the seed mechanically before drying, and the bean is fermented briefly in water to remove remaining mucilage. This strips away most of the fruit influence, producing a cleaner cup where the terroir, the soil, altitude, and variety, expresses itself more directly.

CBD on a Light, Floral Coffee

Infusing CBD extract into a delicate, floral coffee requires some restraint in formulation. The broad spectrum extract we use, winterized, CO₂ extracted from USA-grown organic hemp, has a mild, earthy background note that sits beneath the coffee's flavor rather than on top of it.

Each bag contains 300mg of broad spectrum CBD with 0% THC. The light body and floral character of the Kochere means you'll notice the CBD's earthy undertone slightly more than you would in a heavier, darker roast, which many users appreciate as a reminder that they're drinking a whole-plant extract, not just a flavored coffee.

Brewing for Maximum Floral Expression

The delicate character of washed Ethiopian coffee rewards brewing methods that highlight clarity:

  • Pour-over (V60 or Chemex): The best showcase for Kochere's florals and citrus brightness. Use 93°C / 200°F water, medium-fine grind, 1:15 ratio. Bloom for 30 seconds, total brew time 3–4 minutes.
  • Aeropress (inverted): 2-minute steep, medium grind. Produces a slightly fuller, more concentrated version of the floral notes.
  • Drip machine: Works well for everyday use. Use a clean, well-maintained machine, any off-flavor from a dirty machine will show more in a light, clean coffee like this.
  • Cold brew: Excellent. The florals become more muted but the lemon brightness and clean sweetness intensify. 14–16 hours refrigerated, coarse grind.

Important: Avoid dark roasting this coffee. Kochere's defining characteristics, the jasmine, lemon, and tea-like clarity, are roast-sensitive. We roast our Ethiopia light-to-medium to preserve them.
