Both halves come from the same farm. Single-origin Colombia from the Huila department in southern Colombia, growing elevations 1,500 to 1,900 meters, washed processing, mostly Caturra and Castillo varieties. We have bought through the same direct-trade importer since 2018, which means the green coffee story is real and short: same picker, same washing station, same lot. Read more on our origins.
Half the green coffee goes straight to our Culver City roastery for the regular roast. The other half travels north to the Swiss Water facility in British Columbia for chemical-solvent-free decaffeination, then comes back south for its own roast. Roasting the two halves separately matters because decaffeinated green is more porous than regular green, which means it extracts faster in the roast and reaches development sooner. Roasting them together would over-roast the decaf and under-roast the regular. We pull each side at its ideal point, cool them, then blend by weight in equal parts. How we make half-caf, in three steps.
Roast the regular Colombia
Single-origin Colombia from Huila, SCA 80-plus specialty grade, roasted medium in our Culver City roastery. Development time runs slightly longer than third-wave default to bring chocolate and brown sugar notes forward. Hemp bonds onto the bean during the back half of the roast.
Roast the decaf Colombia separately
The same Huila farm green, sent to the Swiss Water facility in British Columbia for chemical-solvent-free decaffeination to 99.9 percent caffeine-free. The decaffeinated green comes back to Culver City and roasts in its own batch, pulled slightly shorter to match cup body because decaf beans extract faster. Same hemp infusion as the regular.
Blend by weight after the roast
Equal weights of regular roasted Colombia and decaf roasted Colombia go into the blending drum, fifty-fifty by mass. The blend lands at roughly 45 to 50 milligrams of caffeine per 8 ounce cup. Total hemp content per 12 ounce bag is 300 milligrams, broad-spectrum, lab-tested, non-detect for THC.

Half-caf brews like regular coffee. The regular half balances out the slightly faster extraction of the decaf half, so you do not need to change your routine. Three working starting points:
- Pour-over (V60, Kalita Wave, Chemex): 16 grams of coffee to 240 grams of water. Medium-fine grind. Water at 200 degrees Fahrenheit. Total brew time 3:00 to 3:30. You will taste chocolate up front, brown sugar through the middle, clean finish.
- Drip machine: 60 grams of coffee per liter of water, medium grind. Use filtered water at 195 to 205 degrees. Standard cycle, no adjustment needed for the blend.
