What is anaerobic natural coffee?

Anaerobic natural coffee is coffee fermented inside sealed, oxygen-free tanks before the fruit is dried whole around the bean. Removing the oxygen changes which microbes stay active during fermentation, and those microbes produce aromatic compounds that washed and conventional natural coffees never develop. That is why an anaerobic natural can taste like strawberry jam, wafer, rhubarb, and nougat with no flavoring added at any point in the process. The sugars and aromatics were already in the coffee cherry. Sealing the tank concentrates them and drives them into the bean instead of letting them escape. The process takes longer, carries more risk of spoilage, and produces far smaller volumes than standard processing, which is why anaerobic naturals stay rare and cost more than an equivalent washed lot.

Why is this roasted medium instead of dark?+
