Where the Sharp Edge Comes From
Perceived brightness in coffee traces mostly to the organic acids in the bean: chlorogenic, citric, malic, and quinic among them. Two things move them.
- Origin and processing. Growing altitude, varietal, and how the cherry was fermented and dried set the acid profile long before the bean reaches a roaster.
- Roast development. Those acids break down as a roast develops. Pull the roast early and more of that sharpness stays in the cup. Carry it through development and it trades for sweetness and body.

2. Roast Profiles Developed, Not Rushed
Micro-batch roasting lets us hold a profile through development instead of pulling early to hit a volume target. Small batches also mean even roasting, so you never get the scorched notes that come from a drum packed too full.
3. Infusion Inside the Bean, Not Sprayed On Top
Sprayed and tumbled coffees leave oil on the surface of the bean, and that oil shows up as a film on your cup. We bond the hemp extract into the bean during the roast, a process we call ZenFusion. No post-roast additives, no oil slick on a pour-over, and no grassy hemp aftertaste. Every batch is third-party lab tested at 0.0% THC, and the COA is published.
