Does CBD Infusion Change the Taste of Anaerobic Natural Coffee?

Short answer: no, not when the infusion is done during the roast instead of sprayed on afterward. The fermentation that gives an anaerobic natural its fruit happens at origin, in sealed tanks, months before the coffee ever reaches a roaster. Those aromatic compounds are already locked inside the green bean by the time anyone thinks about hemp. Two things can still ruin them. Heat is one. Oil sitting on the surface of the bean is the other. We infuse with a water-soluble hemp extract while the coffee is roasting rather than coating finished beans with oil, so nothing forms a film on the cup. And we hold the roast at medium, because the strawberry and rhubarb in a lot like our Laos Xam Tai burn off long before hemp would ever become the problem.

Where in the process does the CBD actually go in?

Timing is the whole answer, so it is worth laying the sequence out.

The cherries are picked, sealed in oxygen-free tanks, and fermented for 48 hours. They are then dried whole with the fruit still wrapped around the bean. That is where strawberry, wafer, rhubarb and nougat come from, and none of it involves us. The coffee arrives at the roastery as green beans months later with those compounds already inside.

Only then does hemp enter the picture. The extract goes in during roasting, not before it and not after. By that point the fermentation is finished and cannot be undone.

Why does sprayed-on CBD taste different?

Most CBD coffee on the market is not infused. It is coated. Roasted beans get misted with hemp oil, or the buyer is handed a tincture to drop into a finished cup.

Oil and water do not mix, which is why a sprayed bean leaves a slick on the surface of the brew and a plant-like taste that sits over everything underneath it. That is the flavor most people are remembering when they say hemp coffee tastes earthy. It is not the hemp itself. It is the delivery method.

Is the roast a bigger risk than the hemp?

Yes, and this is the part most brands will not tell you.

Fermented fruit is fragile under heat. Push an anaerobic natural into a dark roast and the jam, the florals and the tartness all cook away, replaced by the roast flavors you would get from any bean. Plenty of roasters do exactly that, because a dark roast hides defects and forgives sloppy sourcing.

We will not take the Xam Tai past medium for that reason. If we did, the coffee would taste like a dark roast and the money we paid for a rare fermented lot would be wasted. The hemp extract is the easy variable. Roast level is where these coffees are usually lost.

How can you taste the difference yourself?

Brew a cup and let it cool for five minutes before you judge it. Heat flattens aromatics, and a coffee that only reads as fruity while scalding is usually thin underneath.

Then check three things. Look at the surface of the brew in good light, because a sprayed bean leaves visible beading. Notice whether the fruit arrives before or after the body, since in a properly handled anaerobic natural the fruit is the first thing you taste rather than an afterthought. Finally, pay attention to the finish. A grassy aftertaste that was not there in the aroma points at hemp sitting on top instead of inside.

What does this mean for the Xam Tai lot?

It means the coffee you drink tastes like the coffee we bought. The fermentation happened in Houaphanh, we did not add flavoring at any stage, and the CBD is there to do its job without announcing itself.

Worth being plain about one thing: this is sweet for a coffee, not a sweetened drink. It still drinks like black coffee. Fermentation brings forward sugars that were already in the fruit, which is why the cup lands round instead of sharp.
