The result is a coffee with striking clarity, amplified fruit character, and a clean, vibrant finish which is a combination often difficult to achieve with standard methods.

This process typically involves 

• Introducing nitrogen (N₂) gas into the fermentation tank or chamber, displacing oxygen

• Creating an anaerobic (oxygen-free) environment to enhance fermentation control

• Carefully timing the exposure and duration to create desired flavor profiles

• Often pairing the method with custom yeast strains or proprietary fermentation protocols
